George A. Dickel believed that whisky made during winter was smoother than that made in summer. So his Tennessee whisky is chilled before it goes into the charcoal mellowing vats. This filters out the oils and fatty acids inherent in most whisky products. Declaring his whisky the equal of the finest scotch, he kept with the Scotch whisky tradition by dropping the "e" in "whiskey."
