Mole Margarita

Ingredients
- 1.5 oz. Casamigos Blanco Tequila or Don Julio Blanco Tequila
- 0.75 oz. Lime Juice
- 0.25 oz. Spiced Demerara Syrup*
- 2 dashes Mole Bitters
- Lime Wheel Garnish
- Cinnamon Stick Garnish
Directions
- Combine ingredients in a cocktail shaker with ice.
- Shake vigorously and strain into a rocks glass with fresh ice.
- Garnish with a lime wheel and a cinnamon stick.

Spiced Demerara Syrup
Ingredients
- 35 Cinnamon Sticks
- 2 tsp. Black Peppercorn
- 1 tsp. Green Cardamom
- 1 tsp. Star Anise, Toasted
- 3 cups Sugar
- 1.5 cups Water
Directions
- In a medium pot, heat cinnamon sticks, black peppercorn, green cardamom and star anise until toasted, about 5 minutes.
- Add sugar and water, allowing the mixture to heat for 10-15 minutes until the sugar is dissolved, stirring occasionally to prevent caking.
- Remove from heat and let infuse for 90 minutes.
- Strain spices.
- Transfer syrup to a quart sized container. Keep refrigerated.
