Pimento Dram Scotch Cocktail

A single malt whiskey carries the complexity of spicy pimento dram (a rum-based herbal liqueur flavored with allspice) whilst picking up the tartness of lemon, the sweetness of sugar, and the viscosity of egg white. Topped with aromatic bitters and a violet spray, these layered flavors will be sure to take you on a journey.
Ingredients
- 1.5 oz. Single Malt Whisky
- 0.5 oz. Pimento Dram
- 0.5 oz. Lemon Juice
- 1 oz. Simple Syrup
- 1 Egg white
- 1 dash Aromatic Bitters
- 1 dash Violet Spray

Directions
- Pour whisky, Pimento Dram, lemon juice, sugar syrup and eg white into a shaker with ice.
- Shake and strain into a chilled coupe.
- Add a few drops of aromatic bitters on top of the drink and spritz violet spray for garnish
