Tequila and pineapple are the perfect pair for the summer. Considering tequila stems from Mexican agave, it seems only fitting that these two be combined. When you think of pineapple, where do you think of? Maybe Hawaii? But the delicious fruit isn’t native to the islands. Instead, pineapple is native to the Americas, specifically South and Central America.
You can find tequila and pineapple combined in an array of drinks, including in The Matador, a pineapple cousin to the margarita. The sweetness of pineapple means that most cocktails don’t need additional sweeteners like orange liqueur or simple syrup. Just pineapple goodness.

For this cocktail, we recommend using cristalino tequila. Cristalino is añejo tequila that has been filtered, often through charcoal. Añejo tequila is an amber-colored spirit that has been aged in oak barrels for one to three years, giving it a smoother, oak-forward flavor with notes of vanilla and caramel. Cristalino is created through the filtration process stripping the color and woodier notes imparted by barrel-aging from añejo, while leaving behind the flavors and textures. Cristalino retains the complex flavors of añejo while reflecting the bright notes of an unaged blanco tequila.
Don Julio 70 Cristalino Tequila was one of the first cristalino tequilas to hit the market. This clear añejo was released in 2011 to commemorate founder Don Julio González’s 70th anniversary of tequila making. Also called crystal añejo, Don Julio 70 is twice distilled and aged for eighteen months in American white oak barrels, then charcoal filtered to restore the crisp agave flavor found in blanco tequila — the best of both worlds.
